Since I moved to the Galilee I am blessed to live in the most fertile part of the Land of Israel.
Now we have citrus trees and all kinds of wonderful herbs growing in our garden. There is an amazing magical mix of flavors just outside our back door!
The recipe is simple and perfect. All I have to do is take my scissors outside, snip off some French basil and pick a ripe lemon off the tree.
If you are not in Israel, you may have to rely on your local supermarket for the fresh lemons and basil. But I do know where you can get some of the best Extra Virgin Olive Oil from the Galilee! 🙂
Ingredients:
- 1 chicken butterflied
- 1/2 cup pf Galilee Green Olive Oil
- 1/2 cup of fresh basil finely chopped
- 2-3 cloves garlic
- juice from 1/2 fresh lemon
- generous sprinkling of sweet paprika
Directions:
- prepare a rub by mixing the olive oil, lemon juice, garlic and basil
- place most of rub under skin of chicken and the rest on the outside of the chicken.
- sprinkle with sweet paprika
- broil the chicken on high for 10 minutes
- bake the chicken at 180C/350F for 50 minutes or until done
