Recently my granddaughters visited an ancient olive press to learn how it was done in the “olden days”
An ox or donkey would be harnessed to the beam and turn the grinding stone But the girls had their own ideas.
Today the process is highly mechanized, but the final result is still the purist, cold-pressed extra virgin olive oil.
Here’s a short clip of olives being loaded by conveyor into the washing area before they are put into the machine and pressed into oil.
