Recently I bought a new a new Kitchen Toy that needs very little clean up. It’s a mandolin and it makes really nice sliced vegetables. And it is so much fun!
Here is an easy and yummy dish I know you all will love. It’s made with not just potatoes.
Ingredients:
- 3 medium sized potatoes
- 2 small sweet potatoes
- ½ a butternut squash
- 1 cooking onion
- 3 eggs
- ¼ cup Galilee Green Olive Oil
- 2 tablespoons of breadcrumbs
- ½ teaspoon salt to taste
- ¼ teaspoon black pepper
- 1 crushed garlic clove
Directions:
- Slice potatoes, sweet potatoes, butternut squash and onion
- Add eggs, bread crumbs, olive oil and spices
- Chill in the fridge for 4+ hours
- Add to a generously greased baking dish
- Bake at 350 F/180 C for one hour
This makes a delicious side dish for Shabbat or can be eaten with sour cream for a dairy meal.
