Cooked Green Beans or String Beans are the perfect side dish for a Rosh Hashana meal.  It compliments both chicken and the traditional beef brisket.  Being low in calories, high in fiber and full of Vitamins A and C, they also pack a great nutritional punch.

Ingredients:

Raw Green Beans

The freshest healthiest ingredients!

  • 2 cups of washed whole green beans
  • 1 small purple onion cut in half and sliced
  • 1 sliced bell pepper (orange, red or yellow)
  • 3 cloves of garlic sliced
  • 2 tablespoons Galilee Green Olive Oil
  • 1 tablespoon of seeds – sesame, pumpkin or sunflower
  • Juice of one lemon
  • Sea or Himalayan Salt and pepper to taste

Directions:

  1. Heat up the Galilee Green Olive Oil on a medium flame
  2. Add garlic and onions and saute for 2 minutes
  3. Add bell pepper and saute for another 2 minutes
  4. Add green beans and saute for 5-10 minutes
  5. Add lemon juice and salt and pepper
  6. Lower the heat and cover for an additional 5 – 10 minutes
  7. Uncover and stir in the seeds
  8. Plate and serve

The cooking time depends on how crunchy you like eating your cooked green beans.  I like the crunch so I cook it less.

For an oriental flavor use 1 tablespoon of a light Soy Sauce or Japanese Tamari Sauce instead of the fresh lemon juice. It is delicious served hot or cold. ENJOY!
