I remember the first time I tasted sushi. I loved it!
When I moved to the Galilee, I thought my sushi days were over. However we were surprised to find a few restaurants in Tiberias selling kosher sushi!
Here is a salad that has all the elements of sushi without the form. The two main flavors, nori and ginger are not only unique tasting, but they have health benefits as well. Nori is packed with minerals, B vitamins and iodine. Ginger has wonderful stomach settling properties.
The salad is so easy to prepare and makes the perfect appetizer.
Ingredients:
- 1 ½ cups sushi rice, uncooked
- 1 ¾ cups of cold water
Dressing
- ½ cup rice wine vinegar
- 1 tablespoon Galilee Green Olive Oil
- 1 tablespoon toasted sesame oil
- 1 tablespoon soy sauce
- 1 tsp fresh ginger, grated
- ½ tsp garlic, minced
- ¼ tsp wasabi powder
Salad
- 1 carrot, peeled and grated
- ½ red pepper julienned
- 2 chopped scallions
- ½ mango or peach thinly sliced
- 2 tablespoons toasted sesame seeds
- 1 sheet nori cut in pieces
- ¾ cup flaked baked salmon (1 salmon fillet smeared with 1 tablespoon of maple syrup and ½ a tablespoon of Galilee Green Olive Oil baked for 20 minutes on 350F/180C)
Directions:
- Cook sushi rice
- In a small bowl, mix the dressing ingredients and slowly add the dressing to the hot rice, tossing gently
- Add carrot, red pepper, scallion, mango or peach, sesame seeds and half the nori
- Toss and sprinkle with the remaining nori
- Top with baked salmon and serve
This salad can be prepared ahead of time since it keeps well in the fridge for up to 3 days. Without the salmon it is a great side dish to accompany chicken or turkey. ENJOY!!
