One of the special things about living in Israel is the proximity to fresh-picked-the-same-day seasonal produce and winter is the time for citrus and root vegetables.
We love citrus fruits and we’re already harvesting our own lemons and oranges from our garden. But we don’t yet have a red grapefruit tree so when I saw the beautiful large red grapefruits in the supermarket this morning I bought 5! They are so sweet and juicy!
There is also an abundance of fennel, that smooth white licorice-flavored root vegetable that is so popular in Israel. Since that’s a flavor I love as well, I bought a few of those too.
By the time I got home I was very hungry for lunch and craving something refreshing, delicious and quick.
I grabbed a grapefruit, a fennel, some fresh basil and mint from my garden, Galilee Green Olive Oil (of course) some salt and pepper and whipped together a quick salad for one!
I sliced some cheddar cheese, made myself a coffee and had an absolutely awesome lunch!
Knowing that Galilee Green Olive Oil is really good for me (part of the extremely healthy Mediterranean diet) has encouraged me to eat more salads. They’re easy to put together, taste amazing and I feel really good!

Fennel/Grapefruit Salad for One
Ingredients
- 1 pink grapefruit
- 1/2 cup of fennel
- 1/8 cup chopped red onion (optional)
- 1 tablespoons of fresh chopped basil
- 1 tablespoons of fresh chopped mint
- 1 tablespoon of Galilee Green Olive Oil (GGOO)
- salt and pepper to taste
Directions
- Cut the grapefruit in half as if you’re going to eat it with a spoon. Loosen the sides of each section so it pops out with a spoon and place into a bowl. Squeeze all the remaining juice into the bowl as well.
- Slice the fennel into bite-sized pieces and put into the bowl with the grapefruit.
- Add chopped red onion if using.
- Chop the basil and mint and add to the grapefruit/fennel mixture.
- Add GGOO and salt and pepper to taste.
- Enjoy!
