I’m always looking for new healthy chicken recipes.
In Israel, chicken and turkey are staples. Beef is a luxury.
Even though this recipe is kosher for Pesach, many of us who eat gluten free can enjoy this recipe all year round.
You’ll love the texture and flavor of the “chicken schnitzels” and the homemade french dressing marinade tops it off!
Ingredients:
- 6 Chicken Breasts
- Homemade French Dressing
- 4 cups instant mashed potato flakes
- 4 eggs beaten
- 1/2 cup potato flour (starch)
- 3 large bowls
- 1 skillet
- Galilee Green Olive Oil
Homemade French Dressing
- 1 Cup Galilee Green Olive Oil
- ½ Cup Apple Cider Vinegar
- ⅓ Cup Chopped Onion
- ¼ Cup Honey
- ¼ Cup Tomato Paste
- 2 Cloves Fresh Garlic
- 1 Tablespoon Lemon Juice
- 2 Teaspoons Gluten-Free Soy Sauce
- 2 Teaspoons Dijon Mustard
- 1 Teaspoon Salt
- ½ Teaspoon Pepper
Combine all the ingredients in a food processor or blender and process until very smooth.
Directions:
- Prepare the french dressing and set aside.
- Slice each chicken breast length wise, in half.
- Place the sliced chicken into a Ziploc bag, pour the french dressing marinade over all, and marinate for 6 hours or overnight.
- Place in each of the three bowls in order of use:
- Potato starch
- Egg
- Instant mashed potato flakes
- Prepare skillet with 4 tablespoons of Galilee Green olive oil
- Remove chicken from the bag and place one piece at a time first into the potato starch, then the egg, then the potato flakes. Make sure to coat each piece well.
- Place into hot oil and fry 8 minutes on each side. Remove to set on Paper towels.
- Add GG olive oil as needed throughout the frying
Freezes well. Defrost completely and reheat on a baking sheet in a hot oven.
