I am always looking for healthy snacks to take on my road trips throughout Israel.

I keep these in the freezer until I am ready to go… but sometimes I sneak some to enjoy with my coffee while preparing our newsletter or posts!

You can drizzle melted chocolate on top for festive occasions, but I prefer to mix in chocolate chips… it’s less messy and you get some chocolate in each bite!

Galilee Green Israel Trail Bars

Ingredients:

  • 2 cups raw chopped unsalted nuts (I used almonds and pecans)
  • 2 cups unsweetened shredded coconut
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 tablespoons almond flour
  • ⅓ cup Galilee Green Olive Oil
  • ⅓ cup honey
  • ¼ cup almond butter
  • 1 egg
  • ½ cup chocolate chips

Directions:

  1. Preheat the oven to 350f/180c
  2. Line and 8 inch x 8 inch pan with parchment paper
  3. Mix chopped nuts, cinnamon, salt and almond flour in a large bowl
  4. Stir olive oil, almond butter and honey over a low heat until blended and remove from heat.
  5. Stir the egg into the liquid mixture and pour over the dry ingredients
  6. Mix thoroughly while adding the chocolate chips
  7. Place mixture into the pan and use a spatula to press press down very firmly and as even as possible
  8. Bake about 30 minutes until the edges are slightly brown
  9. Cool completely and cut into squares

    Enjoy them warm from the oven or freeze them to talk on your next hike!
