I am always looking for healthy snacks to take on my road trips throughout Israel.
I keep these in the freezer until I am ready to go… but sometimes I sneak some to enjoy with my coffee while preparing our newsletter or posts!
You can drizzle melted chocolate on top for festive occasions, but I prefer to mix in chocolate chips… it’s less messy and you get some chocolate in each bite!
Galilee Green Israel Trail Bars
Ingredients:
- 2 cups raw chopped unsalted nuts (I used almonds and pecans)
- 2 cups unsweetened shredded coconut
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- 2 tablespoons almond flour
- ⅓ cup Galilee Green Olive Oil
- ⅓ cup honey
- ¼ cup almond butter
- 1 egg
- ½ cup chocolate chips
Directions:
- Preheat the oven to 350f/180c
- Line and 8 inch x 8 inch pan with parchment paper
- Mix chopped nuts, cinnamon, salt and almond flour in a large bowl
- Stir olive oil, almond butter and honey over a low heat until blended and remove from heat.
- Stir the egg into the liquid mixture and pour over the dry ingredients
- Mix thoroughly while adding the chocolate chips
- Place mixture into the pan and use a spatula to press press down very firmly and as even as possible
- Bake about 30 minutes until the edges are slightly brown
- Cool completely and cut into squares
Enjoy them warm from the oven or freeze them to talk on your next hike!
