This dish is one of the salads she posted on her FB Group “How to Lose Your Weight for Good.

Green Quinoa Salad

Ingredients:

Another version of quinoa salad

  • 2 cups cooked quinoa
  • 1 handful chopped parsley
  • 1 handful chopped fresh mint
  • 1/2 red onion chopped
  • 1/4 cup toasted sunflower seeds
  • 2 tbsp toasted almonds chopped
  • 1.5 tbsp Galilee Green Olive Oil
  • 1 tbsp lemon juice
  • salt & pepper to taste
  • optional: chopped dried apricots, diced cucumbers, diced tomatoes, diced celery

Directions:

Quinoa is totally gluten-free.

It is also a complete protein, contains a lot of fiber and is a good source of iron and many other minerals.

To cook quinoa -(This amount will yield 3 cups of cooked quinoa. You can freeze it for a week or so)

  1. Measure out 1 cup dried quinoa, rinse well and put in saucepan.
  2. Add 1/2 tsp salt and 1 3/4 cups water.
  3. Cover and boil for 15 minutes.
  4. Fluff with a fork when tender.
  5. Cool before using in this salad.
  6. Mix together all the ingredients, toss together and serve.
