I have a very simple kitchen. On Friday, it’s me, my knife and cutting board as I cut and chop creating interesting and healthy recipes. I focus on color, freshness and Israeli flavors like lemon juice, olive oil and oregano.
But, simplicity can go just so far. So recently I bought a mandoline, a fancy name for vegetable slicer and now I can make food more beautiful. It allows me to evenly slice all sorts of colorful veggies like radishes, carrots and beets. My world got so exciting!
Here is a great recipe you can make with or without a mandoline:
Galilee Green Israeli Radish Salad
Ingredients:
- 20 medium or large radishes
- ¼ cup Galilee Green Olive Oil
- ¼ cup fresh lemon juice or white wine vinegar
- 1 garlic clove minced
- ½ teaspoon salt
- 1 teaspoon dried oregano
- Black pepper to taste
- Optional – crushed pink pepper flakes, fennel seeds, caraway seeds
Directions:
- Slice radishes as thin as possible
- Add remaining ingredients and mix
- Refrigerate for at least an hour
- Serve and Enjoy!
This salad got rave reviews. It is colorful and fresh and a perfect side dish for any meal. And the bonus is that radishes are really good for you!
