Being on a low-carb, high-fat diet, I often cook some form of eggs with lots of vegetables and copious amounts of Galilee Green Olive Oil for breakfast.
I’m always experimenting to come up with something new, so here’s my Israeli Ranch-Style Eggs based on this amazing Matbucha Salad (which happened to be in the fridge left over from Shabbat 🙂 )
Stick to the sweet potato version and this is great for those of you working to keep your sugar levels under control.
Ingredients:
- 2 eggs
- 1/2 small onion cut in rounds
- 1/2 small potato (or sweet potato) thinly sliced
- 1/4 red pepper sliced in wedges
- 10 spicy olives sliced in half
- 3 tablespoons Galilee Green Olive Oil
- 4 tablespoons Matbucha Salad
- pepper to taste
Directions:
- Heat up the Galilee Green Olive Oil on a medium flame
- Add onions. potatoes, olives, and peppers and saute until soft.
- Beat eggs and add to the vegetables and stir together.
- Add the Matbucha Salad and stir some more.
- Finish off with black pepper
This quick dish is a perfect and healthy meal with a side green salad. ENJOY!!!
