There’s nothing better than rich homemade Mayonnaise to enhance the flavor of a favorite sandwich or as a topping for your favorite fish.

I try my best to cook with the most wholesome ingredients and make everything pretty much from scratch, but there are a couple of dishes I just need to use store-bought Mayonnaise.

So, one Friday, as I was cooking away for Shabbat, I noticed that I ran out of Mayo. Now what? The eggplant had been grilled and the cabbage chopped. These salads call for a few tablespoons of mayo and I didn’t really want to go out to the local convenience store in the middle of it all.

I decided to make my own. I heard that it’s simple to make. All you need is a few key ingredients and presto you’ve got delicious homemade goodness.

Here is the recipe

INGREDIENTS:

  • 1 egg
  • 1/2 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • 2 teaspoons fresh lemon juice
  • 3/4 cup Galilee Green Olive Oil
  • hot pepper flakes

DIRECTIONS:

  • Blend all ingredients except for oil.
  • Add some Galilee Green Olive Oil and blend.
  • Continue to slowly add in GGOO until mixture thickens.
  • add hot pepper flakes and adjust seasoning

There are so many uses for your homemade mayonnaise. It’s perfect for baking all types of fish and chicken with spicy bread crumbs or as a spread on bread or crackers. I just used it for one of my favorite foods – egg salad. 🙂
