Let’s Make Tabouli Salad

Tabouli Salad is a fresh and healthy Mediterranean Grain salad. It is packed with protein, fiber, vitamin C, K and manganese. It is a salad that is great for building strong bones and boosting your immune system.

It’s best to begin this salad at least 3 hours before serving to allow the bulgur to marinate and chill.

 

Ingredients

  • 1 cup dry bulgur wheat
  • 1 ½ cups boiling water
  • 1 ½ teaspoons salt
  • ¼ cup freshly squeezed lemon juice
  • ¼ cup Galilee Green Olive Oil
  • ½ teaspoon dried mint
  • 1 heaping teaspoon crushed garlic
  • 2 medium diced tomatoes
  • 1 chopped cucumber
  • 1 chopped red pepper
  • ½ cup chopped scallions
  • ½ cup chick peas
  • 1 packed cup chopped parsley
  • Optional: sunflower seeds, grated carrots, radishes finely chopped

Directions

  • Step 1 – mix together – bulghur, boiling water and salt in a bowl. Cover with tea towel and wait 15 minutes
  • Step 2 – add – oil, garlic, mint and lemon juice – chill in fridge for 2 – 3 hours
  • Step 3 – just before serving, gently add chopped vegetables to chilled bulgur and correct seasonings to taste
