When you’ve got a large group including kids/ and you have been “celebrating” for a while… whether it’s the week long Festival of Passover or Sukkot… or just summer vacation… sometimes you need something quick, easy and guaranteed even the little kids will like.
Here’s a recipe my daughter Rachel Rosenthal put together for her family over Passover that turned out to be a real hit! Adjust the quantities depending on the size of your group!
Ingredients:
- Diced hot dogs or sausage
- Chopped Cauliflower
- Mini Potatoes
- Galilee Green Olive Oil
- Garlic Powder
- Onion Powder
- Paprika
- Cayenne Pepper (optional)
- Salt
Directions:
- Boil mini potatoes for 10 minutes (till just fork tender)
- Dice the hotdogs
- Chop the cauliflower into bite-sized chunks
- Toss everything with olive oil and the spices to your taste
- Lay on baking sheet in single layer
- Bake at 425 till starting to brown.
