Thursday dinner is usually a lighter meal at our house. This is because on Shabbat the food is plentiful and we want to eat lighter on Thursday evening.

So what’s for dinner on Thursday night when your guest is gluten free, lactose intolerant and allergic to fish? And what can you dish up quickly and still have yummy tasting food? Chicken Drumsticks, of course!

I’m like grill pan cooking, and I know that I can rely on Galilee Green Olive Oil to grease up the pan and create the perfect grill marks for my drumsticks.  The trick was to be sure that the chicken was thoroughly cooked. So I covered the pan with silver foil and made a tent to keep the heat inside and properly cook the chicken.

What surprised me the most was how dressing up the serving plate with cilantro actually finished off the dish with a unique flavor.
