My mother was from Poland, the land of onions and potatoes 🙂 Although my mother was great in the kitchen, spicy and hot food was not among the meals she prepared.
So I was surprised to discover that I love to eat all sorts of spicy foods. Usually I’ll have some bread in hand just in case my mouth is on fire, but I find that I really enjoy this new food sensation.
One of my favorites is roasted hot banana peppers. It is so easy to make and looks beautiful on the plate.
Ingredients:
- 6 hot green banana peppers
- 1 tablespoon Galilee Green Olive Oil
- 6 cloves of garlic unpeeled
- generous sprinkling of Himalayan or Sea salt
- fresh lemon juice
Directions:
- Wash the banana peppers
- Place in shallow baking dish
- Smear with Galilee Green Olive Oil
- Sprinkle generously with salt
- Bake on 225 C or 420 F for 10 minutes
- Turn peppers over and bake until done
- No need to peel
- Squeeze lemon juice on peppers before serving
They are really not too hot. But remember not to touch your eyes after handling the peppers. Great as an appetizer with your other salads.
