Here is a great-tasting spin on the Israeli Salad: (Serves 4)
Ingredients:
- 2 small cucumbers finely chopped
- 10 cherry tomatoes cut in half
- 1 small purple onion finely chopped
- 2 hard-boiled eggs chopped
- ½ red pepper finely chopped
- 1 cup of coriander leaves chopped
Dressing:
- ¼ cup Galilee Green Olive Oil
- Juice from a whole lemon
- ¼ teaspoon garlic powder
- Less than a ¼ teaspoon black pepper
- ½ teaspoon salt
- ¼ teaspoon hot pepper flakes
