Ingredients

Fry Onions, Garlic and Eggplant at Medium Heat in GGOO

  • 4 large red bell peppers
  • 1 medium onion, chopped and diced
  • 6 cloves garlic, chopped
  • ½ cup eggplant, chopped and diced
  • 3 tbsp Galilee Green Olive Oil (GGOO)
  • 1 small can tomato paste
  • ¼ tsp black pepper
  • ¼ tsp cayenne pepper
  • ½ pound ground beef

Instructions

  1. Chop and dice the onion, garlic, and eggplant.
  2. Heat 3 tbsp Galilee Green Olive Oil in a pan over medium heat.
  3. Add the chopped vegetables and spices. Stir-fry them until soft. This takes about 10 minutes.
  4. Stir in the tomato paste. Add ½ can of water if the mixture feels too thick.
  5. Crumble the ground beef into the pan. Stir and cook for another 10 minutes.
  6. Cut off the tops of the red peppers. Save the tops. Remove seeds and membranes to hollow them out.
  7. Fill each pepper with the beef mixture. Place the tops back on.
  8. Drizzle extra Galilee Green Olive Oil over the peppers.
  9. Air fry at 400°F for 20 minutes. Or bake in the oven at 400°F for about 1 hour.
