The Jewish Maccabees rebelled against the mighty Syrian Greeks who had turned the Holy Temple in Jerusalem into a Pagan Temple! Miraculously the Jews defeated the Greeks and purified the Temple. A quieter miracle happened when they discovered one small sealed flask of pure olive oil made especially for the Temple Menorah. There was only enough oil to last for one day, but miraculously it lasted for eight days until new pure olive oil could be made.
Since then, we light our own Chanukah Menorah each night for 8 days to remember and publicize the God’s miracle that allowed our victory over the Greeks. Here is some more info about the holiday.

This year (2017), we at Galilee Green conducted a unique joint project with the Mikdash Educational Center in Jerusalem and the Meshek Achia Olive Press on the outskirts of the biblical town of Shiloh in Samaria.
In preparation for the building of the Third Holy Temple in Jerusalem, pure special pure olive oil is required for the Golden Menorah of the Temple.

Adhering to the strict purity laws dictated in the Torah and further outlined in the Mishnah, a special team was gathered to harvest the olives to produce this oil.
The choicest of the hand-picked olives were used to make the Menorah Oil under strict conditions to avoid any contamination with ritual impurities. Then the remaining olives were pressed into a small quantity of pure olive oil that we are now making available to the public.
This year, we only produced 700 tins of this special olive oil that we recommend you use for lighting your own Shabbat or Chanukah lights. When the Temple is standing, this olive oil may be used in bringing a “meal offering” to Jerusalem according to procedure mentioned in Leviticus 2.
