Here’s how Paul described this meal…

This is ground turkey meatballs served with Brussels sprouts and masked cauliflower. Very low calorie and low carbohydrate.

I do the Brussels sprouts in the air fryer, though they can be baked as well. I halve the Brussels sprouts and put into bowl with olive oil, lemon juice and salt and pepper. Keep the loose leaves as they crisp in the oil and are like chips.

Ground Turkey Meatballs with Brussels Sprouts and Mashed Cauliflower

Ingredients

  • 3 tbsp Galilee Green olive oil (GGOO)
  • 1 pound ground turkey
  • 1 large egg
  • 3 tbsp of gluten free paleo flour
  • 1 tbsp oregano
  • 2 tbsp onion powder
  • 2 tbsp garlic powder

Directions:

  1. Mix the ground turkey with the egg, flour and spices in a mixing bowl
  2. Form into balls and douse them in GGOO before placing them on a baking-paper lined tray (this prevents them from sticking and helps them to brown in the oven
  3. Bake in a pre-heated oven at 375F for 15-20 minutes until brown on the outside and the insides are no longer pink.
