(By the way, he makes some “mean” desserts!)
This is ground turkey meatballs served with Brussels sprouts and masked cauliflower. Very low calorie and low carbohydrate.
Turkey Meatballs and Sprouts
Ingredients
- 1/8 cup Galilee Green olive oil (GGOO)
- 1 lb of ground turkey
- 1/2 cup gluten free paleo flour
- 1 egg
- 1/4 tsp oregano
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1 pound Brussels sprouts
Directions:
- In a large bowl mix ground turkey with egg and gluten free paleo flour.
- Add oregano, garlic and onion powder to taste
- After forming into balls, douse with Galilee Green Olive Oil to flavor, and prevent sticking and getting them to brown.
- Place on backing pan and bake in pre-heated (400 F) oven and bake til brown (15-20 min)
- While the meatballs are baking, halve the Brussel sprouts and put in a bowl with GGOO, lemon juice and salt and pepper to taste. Keep the loose leaves as the crisp in the oil and are like chips! You can roast them alongside the meatballs at 400 degrees for 25-35 minutes. Alternatively, you can cook them in an air fryer like Paul
