Celebrity Chef Rachael Ray really inspired me many years ago. Her recipes were quick, healthy and just so yummy. She would liberally use “EVOO” (Extra Virgin Olive Oil) on everything, telling her viewers how good and healthful olive oil is.
Rachael popularized making meals in 30 minutes which always worked very well for me and my busy life here in Israel.
Here is my own recipe for a tasty meal you too can make in 30 minutes.
Ingredients:
- 1 – 6 ounce Lamp or Veal Chop
- ½ medium sized Spaghetti Squash
- Side Salad – 3 romaine hearts lettuce leaves and 1 small cucumber
- Quick Fresh Tomato Sauce
Ingredients for Tomato Sauce
- 8 Cherry Tomatoes
- ⅓ red pepper
- 2 tablespoons Galilee Green Olive Oil
- Dash of salt, pepper, dried basil
- 1 tablespoon fresh lemon juice
- 1 clove minced garlic
Directions:
Bake Spaghetti Squash:
- Preheat oven to 200C/400F
- Shmear the cut side of the Spaghetti Squash and bake face down on a cookie sheet for 30-40 minutes
- When done – clean off the squash seeds and use a fork to break up the squash into “spaghetti”
- Place “spaghetti” onto a separate plate
Prepare Fresh Tomato Sauce:
- Chop up the vegetables and add lemon juice, olive oil and seasonings
- Blend with an immersion blender
- Adjust seasoning to taste
- Pour ¾ of the sauce over the “spaghetti”
Grilled Lamb or Veal
- Rub lamb or veal chop with olive oil and your favorite spices
- Grease grill pan and pan fry the chop on both sides until done
Plate the chop and the side salad
Add remaining fresh tomato sauce on the chop and side salad
Enjoy with the “spaghetti” squash
Serves 1
This meal can be made for as many dinner guests around your table by doubling or tripling your ingredients.
