I love sweet potatoes and use them in so much of my cooking here in Israel. I add them to soups, roast them as a side dish with chicken or beef and they taste great in my Shabbos Cholent. The Hebrew word for sweet potato is בטטה – “batata” which is borrowed from the original name for it in the southern Caribbean Taino language.
Sweet Potatoes are are creamy and soft when baked, and are full of great nutrients; high in vitamin A, vitamin B5, B6, thiamine, niacin and riboflavin. According to the National Institutes of Health they have anti-aging benefits, help prevent cancer and are great in maintaining good eyesight.
One of the best benefits of eating sweet potatoes is that they have a low glycemic index which means they help control your blood sugar levels. You can eat a sweet potato and stay full for a longer period of time and have a steady amount of energy. This is great for people with Type 2 Diabetes or issues with weight loss.
So you can imagine how excited I was to use sweet potatoes in baking these tasty chocolate nut brownies.
Ingredients:
- 1 cup of baked and mashed sweet potato
- ½ cup scant natural unsweetened peanut butter
- 1 tablespoon Galilee Green Olive Oil
- 2 tablespoons of maple syrup
- ¼ cup cocoa powder
- ¼ cup chocolate chips
- ¼ cup crushed almonds
Directions:
- Bake 1 large sweet potato on 200C/400F until soft and mash
- Set oven to 180C/350F
- Melt peanut butter, olive oil and maple syrup in a pot over a low flame
- In a large bowl add the mashed sweet potato, melted nut butter, olive oil and maple syrup, and cocoa powder and mix well
- Fold in chocolate chips and almonds
- Pour mixture into greased pan and bake for 25 minutes or until cooked through
- Remove from the oven and allow to cool completely before slicing and refrigerating
- These brownies are best when cooled completely
- Store in fridge or freezer and ENJOY!
These brownies tasted like fudge, actually like a Fudgsicle®, and the best thing is that they were so healthy. Try rolling them into balls and freezing them on sticks as a special treat for the kids and grandchildren!
