Sometimes the greatest recipes are due to serendipity.

While cleaning out our cupboards and fridge, we found a package of leftover egg roll wraps which we use to make Home Made Egg Rolls.

We didn’t have the proper ingredients to make egg rolls, so I quickly scanned the kitchen to see what I could use as a filling…. and there they were, three ripe bananas on the counter!

Imagining the warm soft bananas inside the crunchy fried rolls reminded me of Elvis whose favorite food was a fried peanut butter and banana sandwich!

We don’t use peanut butter but there was half a jar of cashew butter in the cupboard! Yummm.

This was starting to get serious… and it was sounding more like a dessert than a main meal, so I started hunting for more ‘dessert’ ingredients that might go with the PB & Banana.

I quickly found some chocolate chips, raisins and pecans in the cupboard and shredded mozzarella cheese (parve) in the fridge.

When we tasted the first one to come out of the frying pan, the combination of flavors were mind-bendingly delicious along with a steaming fresh cup of coffee.

Ingredients

Before wrapping and frying above… finished product below!

  • Square pre-made egg roll wraps
  • 2 tbsp Galilee Green Olive Oil (GGOO)
  • Cashew Butter
  • Ripe Bananas sliced
  • Chocolate Chips
  • Raisins
  • Crushed Pecans
  • Shredded Mozzarella (non-dairy) or (dairy)

Directions:

  1. Spread cashew butter in the center of the wrap leaving a large margin all around.
  2. Add a layer of sliced ripe bananas
  3. Add  the raisins, chocolate chips and pecans on top of the bananas.
  4. Sprinkle with a layer of shredded cheese.
  5. Roll the filling into the wraps like the diagram below
  6. In a large skillet, heat some GGOO to medium heat and place rolls flap down, a few at a time, turning occasionally until golden brown all around 2-3 minutes and drain on paper towels.


These are amazing straight out of the frying pan with a coffee!
