One of my daughters recently shared this great idea for using up Shabbat leftovers.
The original recipe came from popular chef Danielle Renov, also of Jerusalem. BTW Danielle is also a big fan of Galilee Green Olive Oil!
You can use whatever veggies you have on hand and play with the flavors.
This version is Asian, but by shifting around the spices you could make it a Mexican, Moroccan or Cajun version.
You can use this as a main course or a side dish.
“Beefed Up” Fried Rice
Ingredients:
- 1 tsp sesame oil
- 1 tbsp Galilee Green Olive Oil
- 1 (400g) coleslaw mix
- 1/4 tsp salt
- 3 garlic cloves (minced)
- 1 tsp minced ginger (from 1/4 inch piece)
- 1 cup chopped scallions plus extra for garnish
- 2 cups chopped “leftover” protein – chicken or beef
- 1/4 cup soy sauce
- 2 tbsp rice vinegar
- 2 tbsp mirin (or white wine)
- 4 cups cooked rice
- optional chopped veggies – eg carrots, bell peppers.
Directions:
- Heat a large wide pot over medium high heat.
- Add oils, coleslaw mix and salt.
- Sautee for 3 – 4 minutes.
- Add garlic and ginger.
- Cook for another 2 minutes
- Add “leftover protein” and scallions
- Stir to come and cook for another 5 minutes
- Add the rest of the ingredients and mix until everything is evenly incorporated and rice is heated through.
Serve hot and enjoy!
