I love quick, easy, home-made healthy food.

Fresh vegetables are my favorite go-to side dish but sometimes I haven’t made it to the market and I need to turn to my freezer.

Whether I use frozen cauliflower, green beans or broccoli (as in this recipe), when I toss in Galilee Green Olive Oil, fresh garlic, ground almonds and a little salt and pepper, I have an incredibly delicious side dish for my grilled meat, fish or baked chicken.

I’ve also made this for a snack to eat on its own with a little Parmesan cheese sprinkled on top after baking!

Oven Grilled Broccoli with Almonds

Ingredients:

Tin of Galilee Green Olive Oil

Add a taste of Israel to your meals

  • 1 bag (1.5 pounds) frozen broccoli florets
  • 1/4 cup Galilee Green Olive Oil #GGOO
  • 1/2 cup ground almonds (buy them ground or grind them yourself in a food processor)
  • two cloves finely chopped garlic
  • 1/2 tsp salt
  • 1/4 tsp pepper

Directions:

  1. Preheat oven to 375F (190C).
  2. Line an oven roasting pan – big enough for the florets to lay in a single layer – with baking paper.
  3. Mix all the ingredients (except for the broccoli) together in a large bowl
  4. Add the broccoli to the mixture and toss well.
  5. Pour the contents into the roasting pan in a single layer.
  6. Roast for 40 to 45 minutes until slightly brown and a little crispy on the edges.
