If you love hummus, but can’t have the chick peas (SCD or LCHF), try this zucchini-based recipe. It is light, fresh, healthy and yumm

There are many people on an SCD (Specific Carbohydrate Diet is a group of foods which are grain-free, sugar-free, starch-free, and unprocessed) or on an LCHF (Low Carb/High Fat) diet who would love hummus but can’t tolerate the chick peas (“hummus” actually means “chick peas”)

Here is an amazing recipe for “No Chick Pea Hummus” which is a great option as an appetizer for the Shabbat table.  And amazingly our subscriber Cheryl Steinberg sent in a very similar SCD version that includes navy beans!

Ingredients:

  • Zucchini Hummus Ingredients1 medium-sized raw zucchini, washed and unpeeled
  • 1/4 cup tahini (sesame paste)
  • juice of 1 lemon
  • 2 tablespoons Galilee Green Olive Oil
  • 2 large peeled garlic cloves
  • 1/4 fresh parsley
  • 1/2 teaspoon sea salt
  • 1 teaspoon cumin

If you are having a larger group, simply double the recipe.

Ingredients: (Cheryl’s version)

  • 3 cups peeled & chopped raw zucchini
  • 1 cup cooked white/navy beans (previously soaked in water overnight)
  • 2/3 cups tahini (sesame paste)
  • 1/3 cup fresh lemon juice
  • 1/4 cup Galilee Green Olive Oil
  • 4 cloves of garlic, peeled
  • 2 teaspoons sea salt (or to taste)
  • 1 tablespoon ground cumin

Directions:

  • Zucchini Hummus BlendingIn food processor, finely chop garlic.
  • Add the rest of the ingredients.
  • Puree in the processor until creamy.
  • Pour into a shallow serving bowl.
  • Refrigerate 1 hour.
  • Garnish with 1 tablespoon of Galilee Green Olive Oil drizzled on top and your choice of zatar, paprika or some more parsley

Enjoy! You had better use it up in two days, as it can go “off” fairly quickly even in the refrigerator… but it’s so yummy and healthy you should have no problem finishing it up!
