Chickpea Crust Pizza Recipe: Easy Gluten-Free, High-Protein Homemade Pizza

Chickpea Crust Pizza RecipeFor a while, Sarah Eliana has been making pizza with a cauliflower crust. However, chickpeas are a staple here in Israel and we love sprouting them and adding them to our dishes.

So she came up with this chickpea crust pizza recipe that’s crispy on the outside, satisfyingly doughy inside, and packed with plant-based protein.

This easy version starts with sprouted chickpeas (or canned for speed), comes together in a food processor, and uses Galilee Green extra virgin olive oil for rich flavor and golden edges. It’s naturally gluten-free, yeast-free, and perfect for a healthy weeknight pizza night.

We tested a version that came out a bit crumbly and refined it with binding tips and baking steps drawn from reliable chickpea-crust methods. The result holds together better while still delivering that crunchy finish.

Why You’ll Love This Chickpea Crust Pizza

  • High in protein and fiber from chickpeas
  • Gluten-free and grain-free

Ingredients for Chickpea Crust Pizza Recipe

For the crust (one 10–12 inch pizza)

  • 1 cup dried chickpeas, sprouted (about 2 cups once sprouted) or 1 (15 oz / 425 g) can chickpeas, drained and thoroughly dried
  • 1 large egg (or 1 flax egg: 1 Tbsp ground flaxseed + 3 Tbsp water, rested 5 minutes)
  • 2–3 Tbsp Galilee Green extra virgin olive oil, plus extra for the pan
  • ¼–½ cup chickpea flour (start with ¼ cup)
  • ½ tsp salt
  • Spices: ½–1 tsp garlic powder, ½–1 tsp dried oregano, black pepper, pinch of cayenne (optional)

For the sauce

  • 2–3 Tbsp organic tomato paste
  • 1–2 tsp Galilee Green olive oil
  • Splash of water to loosen
  • Pinch of salt, oregano, garlic powder, and black pepper

Toppings

  • Shredded mozzarella
  • Sliced onions, olives, mushrooms, and squash (zucchini or summer squash)
  • Optional: sliced tomatoes, fresh basil, roasted peppers

How to Make Chickpea Crust Pizza

Good to the last bite!

1. Prepare the chickpeas
If sprouting: Soak 1 cup dried chickpeas 8–12 hours, drain, then rinse 2–3 times daily for 1–2 days until short tails appear. Dry thoroughly after the final rinse. For the faster route, use canned chickpeas, rinse, drain, and pat completely dry.

2. Blend the crust
Preheat oven to 190–200 °C (375–400 °F). Line a baking sheet or pizza pan with parchment and brush generously with Galilee Green olive oil.

In a food processor, combine the chickpeas, egg (or flax egg), olive oil, salt, spices, and ¼ cup chickpea flour. Process until smooth and thick — similar to dense hummus or falafel batter. Add more chickpea flour a tablespoon at a time if the mixture is too wet; add water only by the teaspoon if too stiff.

3. Shape and pre-bake
Spread the batter into a thin round about ¼ inch (6 mm) thick. Pre-bake 15–20 minutes until the surface is dry, set, and lightly golden at the edges.

4. Add sauce and toppings
Mix tomato paste with a little Galilee Green olive oil, a splash of water, and spices into a spreadable sauce. Spread a thin layer over the crust. Top with shredded mozzarella, onions, olives, mushrooms, squash, and any other toppings you like. Keep toppings light so the crust stays crisp.

5. Finish baking
Return to the oven for 8–12 minutes until the cheese melts and the edges are crisp. Rest 5 minutes before slicing.

Tips for a Doughier Yet Crunchy Chickpea Crust

  • Thoroughly drying the chickpeas and keeping liquid low prevents a crumbly texture.
  • The egg (or flax) plus a little chickpea flour gives structure while the olive oil promotes browning and crisp edges.
  • Spread the crust thin and pre-bake until firm before adding toppings.
  • Tomato paste makes an excellent low-moisture sauce base.
  • For extra crunch, use a well-oiled cast-iron skillet or perforated pizza tray.

Variations

  • No-sprout version: Use thoroughly dried canned chickpeas with the same egg, oil, and flour ratios.
  • Socca-style: Whisk 1 cup chickpea flour with about ¾–1 cup water, 2 Tbsp Galilee Green olive oil, and spices. Rest 20–30 minutes, pour into a hot oiled pan, and bake until set before topping.
  • Add a tablespoon of arrowroot or tapioca starch for extra firmness, or nutritional yeast for flavor.

This chickpea crust pizza recipe delivers a nutritious, flavorful alternative to traditional dough. Finish with a light drizzle of Galilee Green extra virgin olive oil for authentic Mediterranean richness.
