As summer approaches we all will be eating more of our meals outdoors with family and friends. Here in the Galilee the summer sun can make foods spoil very quickly.
Many of us thought that summer food poisoning was caused by the mayonnaise in coleslaw and potato salad. Others, based on folklore think the culprit was onions.
No matter what you believe, here’s a great fresh, cooling salad for your BBQ or picnic that avoids both ingredients. The cashews give it an extra crunch and body. It’s a real crowd pleaser.
Just remember not to leave the food out longer than 4 hours and try to keep it cool as long as possible before eating it!

Ingredients
- 1/2 head green cabbage, chopped
- 1 teaspoon shredded flaked coconut (be sure its raw, if needed)
- 1 tbsp lemon juice
- 1/8 cup Galilee Green olive oil
- 1/8 cup soy sauce
- 1.5 tbsp sesame seeds (optional)
- 1/4 tsp curry powder
- 1/2 carrot, shredded
- a handful of Cashews crushed
- 1/3 red pepper chopped
- 1 tbsp raisins
Preparation
In a large bowl, toss together all ingredients, making sure cabbage is
evenly coated. Enjoy!
