Cucumber Onion Salad – Easy and Fresh

We noticed this wonderful recipe on her Facebook page. She and her husband Jim have been part of the Galilee Green Family since 2018!
This salad is simple, delicious, refreshing and healthy!
And according to Susan, “Jim loves this stuff!”
In addition to being a great side salad, Susan suggests turning it into a meal by adding a can of garbanzo or black beans, chopped tomatoes, avocado, Feta cheese chunks and serve with a tasty sourdough or crackers
CUCUMBER ONION SALAD
Ingredients
- ¼ cup Galilee Green olive oil (GGOO)
- ¼ cup vinegar (ACV, red or white wine vinegar, rice vinegar or other)
- ¼ cup water
- 1 tbsp sugar
- 1 tsp salt
- ½ tsp pepper
- ½ tsp minced fresh dill (optional)
- 2 or more medium cucumbers
- 2 or more medium onions
Directions:
- In a bowl, mix together the water, vinegar, GGOO, sugar, salt, pepper and dill
- Thinly slice the fresh peeled cucumbers (I use a melon-baller to remove the seeds)
- Thinly slice an equal amount of onions
- Mix the cucumbers and onions into bowl with the dressing
The salad will be good for several days in the refrigerator. It improves the longer it marinates.
