We like to prepare hearty soups that are cooked for a long time to bring out the flavors of the vegetables and spices.
But sometimes you just don’t have the time to let the pot of soup simmer all day.
This is a delicious soup that doesn’t need broth but is full of flavor.
It’s great for one or two people.
Easy Red Lentil – Carrot Soup
Ingredients:
- 1 cups of red lentils (preferably sprouted)
- 1 red onion chopped
- 3 medium carrots, grated
- 1 teaspoon of turmeric
- 1 teaspoon dill
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 2 tablespoons Galilee Green Olive Oil (GGOO)
- 2 tablespoons of coconut oil
- salt to taste
Directions:
- Soak the lentils for two hours before cooking. Change the water at least twice.
- In a skillet, heat the olive oil and coconut oil and add the chopped onions to caramelize them.
- Once the onions are golden, add the lentils, carrots and the spices.
- Mix well. Wait 7 minutes while mixing.
- Once everything starts to brown add enough water until everything is submerged. Then add another 5cm (2 inches) of water.
- Bring to a boil on medium heat and then simmer for 30 minutes..
- Add salt or even some miso to your liking and serve hot in a bowl sprinkled with toasted pumpkin seeds.
Enjoy with salad or rice or anything of your choice.
