When you are keeping a kosher kitchen, certain classic recipes present a challenge because we don’t mix dairy and meat ingredients together.

French onion soup is usually made with a beef broth, and topped up with lots of gooey mozzarella and Parmesan cheese! So how to you make a Kosher French Onion Soup?

One solution is to substitute the beef broth with a “parve” (neither meat nor dairy) “beef-flavored” soup mix and use real cheese as we do in the recipe below from our old friend Emunah Braverman at Aish.com

Other solutions include substituting beef broth with mushroom broth… or using a beef broth base with “parve” non-dairy cheese. Vegans will substitute both!!

Fabulous French Onion Soup

Ingredients:

Yellow Onions

  • 10 onions, sliced
  • 4 tablespoons butter
  • 4 tablespoons Galilee Green olive oil
  • 1 tablespoon sugar
  • 1 teaspoon nutmeg
  • 8 teaspoons parve beef soup mix
  • 10 cups water
  • Salt and pepper to taste
  • 3/4 cup dry red wine
  • 12 slices thick French bread, toasted
  • 2 cups grated mozzarella cheese mixed with 1/2 cup grated Parmesan cheese

Directions:

  1. Preheat oven to 400 degrees.
  2. Heat butter and oil in large stockpot.
  3. Sauté onions until soft.
  4. Add sugar and nutmeg and continue to Sauté.
  5. Add soup mix water, salt and pepper and bring to a boil.
  6. Simmer for 10 minutes, add wine and simmer for another 10 minutes.
  7. Prepare 12 ovenproof bowls.
  8. Sprinkle some cheese in the bottom of each bowl.
  9. Ladle in soup.
  10. Cover with slice of bread and then sprinkle cheese on top to cover.
  11. Bake until top browns.
