I must use 10 – 15 onions every week cooking for Shabbat on Fridays.  I add them to soup,  different Israeli Salads and sauteed vegetables and this great kugel recipe.

This week I was blessed with an abundance of onions.  They were big, just harvested and perfect.  I decided to make an onion kugel or pudding for this week’s side dish. (here’s a great recipe for potato kugel)

Onions are just so full of amazing health giving properties.  Onions are  sources of dietary flavanoids which have been proven to reduce the risk of heart disease and, in addition, they decrease the risk of blood clots. They also increase “good” cholesterol and lower “bad” cholesterol in the bloodstream. It’s not surprising that the Talmud (Nedarim 66a) tells us that onions are good for the heart!

Here is this easy and tasty recipe you will love:

Ingredients:

Onion Kugel Recipe - Smells like Shabbat

The fresh kugel fills the house with the scent of Shabbat!

  • 5 onions, thinly sliced
  • ½ cup Galilee Green Olive Oil
  • ½ cup water
  • 2 teaspoons sea salt
  • 1 ¼ cups flour
  • 2 teaspoons baking powder
  • 5 eggs
  • pepper, to taste
  • Sweet paprika and olive oil for sprinkling

Directions:

  1. Place all the ingredients except the sweet paprika and extra olive oil in a large bowl and mix well
  2. Pour into a well-greased 7 x 10 inch baking pan
  3. Sprinkle with sweet paprika and olive oil
  4. Bake on 180C/350F for 40 minutes or until done and golden
  5. ENJOY!!

The house smells wonderful in anticipation for Shabbat while the kugel is baking.
