For many people, the way to make Shabbat meals more festive, is to add a dessert to the menu.
Here is a cake that is quick and easy to prepare. I’ve adjusted the amount of sugar and type of flour so that it can be healthier.
Ingredients:
- ½ cup Galilee Green Olive Oil
- 1 cup sugar
- 2 eggs
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 cup natural no sugar added applesauce
- 1 ½ cups whole wheat flour
- 1 cup raisins
- 1 teaspoon ground cinnamon
Directions:
- In a large bowl mix olive oil, sugar and eggs until light and fluffy
- Dissolve baking soda into the applesauce and add to above mixture
- Add dry ingredients
- Stir in raisins
- Bake in a 6” x 10” baking pan on 350F/180C for 1 hour or until toothpick ready
- ENJOY!!!
This cake is so moist and tasty and always a hit with young and old alike.
