For many people, the way to make Shabbat meals more festive, is to add a dessert to the menu.

Here is a cake that is quick and easy to prepare.   I’ve adjusted the amount of sugar and type of flour so that it can be healthier.

Ingredients:

This cake goes great with a mug of coffee!

  • ½ cup Galilee Green Olive Oil
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 cup natural no sugar added applesauce
  • 1 ½ cups whole wheat flour
  • 1 cup raisins
  • 1 teaspoon ground cinnamon

Directions:

  1. In a large bowl mix olive oil, sugar and eggs until light and fluffy
  2. Dissolve baking soda into the applesauce and add to above mixture
  3. Add dry ingredients
  4. Stir in raisins
  5. Bake in a 6” x 10” baking pan on 350F/180C for 1 hour or until toothpick ready
  6. ENJOY!!!

This cake is so moist and tasty and always a hit with young and old alike.
