Betcha can’t eat just one! Remember that slogan?  I never could eat just one Lay’s Potato chip and walk away.  Lays Classic are still  my favorite.

Chips are irresistible. Especially when they have the right amount of oil and salt. I wanted to come up with a healthy homemade version that is quick to prepare, healthy and satisfying.

Beet Chips!

Beets are such a healthy vegetable with many nutritional benefits.  They are high in immune-boosting vitamin C, fiber, and essential minerals like potassium which is important for healthy nerve and muscle function.  They also have manganese which is good for your bones, liver, kidneys, and pancreas.

And when you add in the amazing benefits of Galilee Green Extra Virgin olive oil you have a super healthy combo that is almost guilt free – Beet Chips!

Ingredients:

Directions:

  1. Pre-heat the oven to 375F/190C
  2. Peel beets
  3. Thinly slice beets with a mandolin (or a sharp knife), getting them as consistently thin as possible
  4. Sprinkle with olive oil, salt, pepper and rosemary
  5. Bake for 15-20 minutes or until crispy and slightly brown
  6. Flip over the beets and bake for 5 more minutes
  7. ENJOY!
