Our long lost, newly discovered cousin RoSa and Meir came to visit us in Tiveria from their home in Rishon LeTzion.

Our Dutch grandmothers were sisters!

Rosa, until recently thought she had no living relatives.

Anyway Rosa brought some healthy seed crackers as part of a hostess gift.

They were delish and disappeared very quickly.

The photo above is NOT of the crackers in the box… my wife Sarah Eliana loved them so much, she decided to read the ingredients and duplicate the results.

They turned out better than the crackers in the box!

Ingredients:

  • 1/2 cup crushed flax seeds
  • 1 finely grated organic zucchini
  • 1/2 cup organic sprouted sunflower seeds
  • 1/2 organic onion
  • 4 tablespoons organic chia seeds soaked (in 16 tablespoons of water for 5 minutes)
  • 4 tablespoons sprouted pumpkin seeds
  • 10 sprouted almonds
  • 1/2 teaspoon sea salt
  • 1 teaspoon of organic spirulina
  • 1 tablespoon chopped organic parsley
  • 1 tablespoon organic dill
  • 1/2 cup almond flour
  • 2 tablespoons of GGOO olive oil

Directions:

  1. Soak your seeds (sunflower, pumpkin, almonds) for at least 6 hours to activate the nutrients they contain… after that time wash them very well.
  2. Sprout the seeds (optional but recommended)
    1. NOTE: Organic seeds will usually sprout. Non-organic may not always sprout.
    2. If you have a sprouter, spread the seeds out on the tray and leave them for 1 or two days, spraying them every 4 hours until you see the roots come out.
    3. If you don’t have a sprouter, then spread them on a colander.. insert the colander into a container deeper than the colander and cover with a lid.. mist every 4 hours for 1-2 days until sprouted.
  3. With all the ingredients ready, hand mix all the dry ingredients except the almond flour. If the ingredients are still very lumpy you need to process them in a blender or handblender a little more.
  4. The mixture will probably be watery, now you can add 1 tablespoon of almond flour at a time and mix until the batter is still smooth but not too watery. Do not use all the flour if it is not necessary.
  5. Now on a tray spread the dough with a rolling pin (grease it with olive oil) or by hand until it is flat… with a knife, mark squares in the dough to the desired size.

Two ways to prepare them

  1. If you want them to be more nutritious, do not bake them, rather dehydrate them:
    Place in the oven at minimum temperature (40-50 Celsius) for about 4 hours or until they are dry…
  2. or bake them for about 25 min at 180 Celsius.
