One of the pleasures of life in our small farming village in Israel is shopping for fruit and vegetables in season.  We might not have strawberries or watermelons all year round, but when we do, these fruits and vegetables are so fresh and full of flavor.  They haven’t flown over 2000 miles to get to our markets losing their luster and vitamins.

Our guests brought fresh greens from their farm

This week our guests brought us a huge armful of heirloom Collard Greens.  I had green, yellow and red varieties of brilliant and color and nutrition. The abundance was incredible and I was so thankful to HaShem that I get to experience such things.

Leafy green vegetables, like swiss chard, kale, collard greens and spinach pack an amazing nutritional punch.  Especially together with Olive Oil they can decrease cholesterol while reducing risk for heart disease and stroke, manage diabetes, lower high blood pressure and keep you feeling young.  They are low in calories and high in fiber.

It is very important to add greens to your diet to boost your overall health.

Here is an easy and tasty way to prepare your favorite Leafy Greens:

Ingredients:

  • 3-4 cups of washed and chopped leafy greens – Swiss Chard, Kale, Spinach and Collard Greens
  • 1 chopped cooking onion
  • 4 cloves of onions
  • ½ a jalapeno pepper chopped
  • 3 tablespoons of Galilee Green Olive Oil
  • Salt and black pepper to taste
  • Juice from ½ a lemon

Directions:

  1. Heat Galilee Green Olive Oil in a deep frying pan on a medium flame
  2. Add onions to the frying pan and sweat for 3 minutes
  3. Add garlic and try not to burn them
  4. Add peppers and mix for another minute
  5. Finally add the chopped greens and stir them until they are coated with the olive oil and other ingredients
  6. Lower flame and cover the pan for 5-10 minutes until green have softened
  7. Be sure to check the pan and stir the vegetables once or twice
  8. Add seasonings and lemon juice and serve

This dish can be eaten on its own or served over rice and tastes great at room temperature.  I served it over spiral rice noodles as a great side dish for Shabbat.  Great anytime!
