We usually make oir own duck sauce with a jar of apricot jam.
Unfortunately, one time we ran out of the jam, but had a craving for egg rolls.
No problem for my creative wife Sarah Eliana, “We have some apples in the fridge… I will use them.”
Twenty minutes later and we had this sweet and spicy sauce!!!
Apple Duck Sauce
Ingredients
- 1 large red apple
- 1 juice of a small lemon
- 2 tbsp Galilee Green Olive Oil (GGOO)
- 1 tsp minced ginger
- 1 tbsp silan (date honey) or regular honey
- 2 tsp of tapioca flour
- 1 tsp minced garlic
- 1 tsp crushed chile peppers
- 1 tbsp of tamari or soy sauce
- 1/4 cup water
Directions:
- Peel the apple, chop finely and then puree in a food processor or with hand blender
- Separately, dissolve the tapioca flour in the quarter cup of water
- Heat the GGOO in a large skillet and add minced ginger, and minced garlic (the secret is to mince your own ginger from fresh ginger root)
- Cook on medium heat for 4-5 minutes and stir often
- Add the pureed apple, lemon juice, tamari sauce and silan cook for another few minutes until the mixture turns dark.
- Slowly add the water/tapioca mixture, stirring constantly until you see bubbles on the surface
- Add the crushed chilies and stir and take the mixture off the heat
- Store in a glass bowl in the fridge until ready to serve with your egg rolls!
