Sometimes you are just looking for something quick and easy to prepare for lunch.

This is a light and refreshing option.

I tend to enjoy tinned mackerel, but most people prefer tuna.

The Galilee Green Olive Oil gives the fresh ingredients a wonderful flavor.

Ingredients:

  • 7 ounce can of tuna
  • ¼ chopped purple onions
  • 2 Israeli pickles chopped
  • 6 cherry tomatoes cut in quarters
  • ¼ cup feta cheese crumbled
  • ¼ cup lemon juice
  • 2 tablespoons Galilee Green Olive Oil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon curry powder
  • 2 rice cake crackers on the side
  • Optional – ¼ cup crushed walnuts, ¼ cup chopped celery

Directions:

  • Mix everything together, but the feta cheese and rice crackers
  • Top with Feta Cheese
  • Plate with rice crackers on the side

This looks delicious! One thing though, would you clarify what an “Israeli pickle” is? Thank you!

    Hi Kellie. The most popular brand of Israeli pickle is the Beit HaShita brand from Osem. If you can find a local supermarket that carries Osem products, you should be able to find these pickles or perhaps ask the store to order some from the distributor of the Osem products. If you can’t find any pickles from Israel, you can substitute your favorite brand of kosher dill pickles.
