Most of our Galilee Green Recipes are very healthy. However these muffins are one of our all-time favorites.
These muffins used to be served each morning to our guests who stayed with us at our vacation rental suites. They told us the muffins were one of the highlights of their stay. Now you can enjoy them too!
Ingredients:
- 2 cups flour
- 1 cup sugar
- 2 tsp baking soda
- 2 tsp cinnamon
- 1/4 tsp salt
- 3 eggs
- 1 cup Galilee Green Olive Oil
- 2 tsp vanilla
- 2 cups grated carrots
- 1/2 cup dried cranberries (craisins)
- 1/2 cup chopped walnuts
- 1 apple – finely chopped
- 1/2 cup flaked coconut
Directions:
- Preheat oven to 350F (175C)
- Line 12 muffin cups with liners
- In a large bowl, mix flour, sugar, baking soda, cinnamon and salt
- Stir in carrot, cranberries, nuts, coconut and apple
- Beat eggs, oil and vanilla and stir into the carrot/flour mixture, just until moistened
- Scoop batter into muffin cups
- Bake for 25 minutes or until a toothpick comes out clean.
