We grew up in a time when we really didn’t know or worry so much about healthy eating. We ate hot dogs and drank sugary soft drinks and didn’t think about food additives and how they affect our wellness.

One childhood comfort food was salami from the local kosher butcher in Toronto. I would have it in any form. In sandwiches on rye bread, mustard and dill pickles or I just ate a chunk of it at a time savoring the smoky spice and fat. Who knew it was not the healthiest of foods?

eggs-of-many-colorsHere is a healthy version of a quick dinner classic – Salami and Eggs.

Ingredients:

  • 3 eggs
  • 1 small onion cut in rounds
  • 4 slices of turkey slices cut in bite size squares
  • 2 tablespoons chopped fresh basil
  • 3 tablespoons Galilee Green Olive Oil
  • Salt and pepper to taste

Directions:

  1. Heat up the Galilee Green Olive Oil on a medium flame
  2. Add onions and saute until translucent
  3. Add turkey and dry the meat out slightly
  4. Beat eggs and add to the onion and turkey and scramble
  5. Finish off with chopped basil, salt and pepper

This quick dish is a perfect and healthy meal with a side green salad. It even satisfies my salami cravings that I still get from time to time. ENJOY!!!
