This dish is one of the salads she posted on her FB Group “How to Lose Your Weight for Good.

This one is super easy and super versatile.

Grape Tomato – Hearts of Palm Salad

Ingredients:

This tray has homemade pesto added!

  • 2 cups grape tomatoes, preferably in a variety of different colors, sliced lengthwise
  • 1 can whole hearts of palm, sliced or cubed
    (the already sliced heart of palm are tough, not tender)
  • 1 red onion thinly sliced
  • 1 clove garlic minced
  • 2 tablespoons parsley chopped fine (optional)
  • 3 tablespoons vinegar of your choice (I use wine vinegar)
  • 2 tablespoons oil of your choice (I use Galilee Green Olive Oil)

Directions:

  1. Assemble everything in a bowl
  2. Toss
  3. Enjoy!
