Often, what people refer to as “Israeli” cooking, finds its source from Moroccan Jewry who immigrated to Israel in the 1950’s and had a big influence on the local culture. Moroccan cooking is extremely tasty and full of amazing spices. These spices not only add to the complexity of the dishes, but have incredible health benefits.
This chicken dish calls for cumin, turmeric and cinnamon. Here are their health benefit properties:
Cumin aids in digestion, improves immunity, treats insomnia, respiratory disorders, asthma, bronchitis, common cold, lactation, anemia and skin disorders – just to name a few.
Turmeric is a powerful anti-inflammatory food and is a very strong antioxidant. Which compliments the anti-inflammatory properties of the olive oil.
Cinnamon can lower blood sugar levels and can reduce heart disease risk factors.
Ingredients:
- 2 tablespoons honey
- ¼ cup Galilee Green Olive Oil
- 2 teaspoon Cumin
- 2 teaspoon Turmeric
- ½ teaspoon Cinnamon
- 4 cloves of chopped garlic
- 1 chicken cut in 8 pieces
- 4 potatoes
- 2 cooking onions
- 1/cup dates
- ¼ cranberries
- Paprika, black pepper and onion powder
Directions:
- Placed cut up chicken in a large bowl
- Cut up potatoes and onions and add to bowl
- Combine: oil, honey and spices to make the marinate
- Mix ¾ of the marinade with chicken, potatoes and onions
- Place the chicken, onions and potatoes in a roasting pan and bake for 40 minutes at 350F/180C.
- Mix dates and cranberries with remaining marinade
- Add to chicken and bake for another 15 -20 minutes
The result is a chicken dish that has a rich and aromatic flavor which will have everyone asking for seconds. ENJOY!!
