Often at a family Shabbat dinner or celebration, someone will offer a toast, share some words of Torah and say “L’Chayim (to life!)”- sort of like in Fiddler on the Roof without the dancing!
Everyone chooses their preferred beverage for the toast. I enjoy an occasional scotch. The smokier the better.
So when one of our daughters offered me a gin and tonic with fresh lime, my first response was, “No thank you.”
She convinced me to try some and I was amazed at how delicious and refreshing it was!
I wondered if I could incorporate our delicious Galilee Green Extra Virgin Olive Oil with my new favorite flavors into a chicken dish. So I did a little experimenting and put together a combination that really excites my taste buds. Delicious!
NOTE: when you cook with liquor, wine or beer, the flavor remains without the alcohol.
L’Chayim Chicken
Ingredients
- 6 chicken thighs
- 2 leeks (whites only) sliced into rings
- 6 medium-sized fresh mushrooms sliced in half
- 1 zucchini cut into bite-sized chunks
- 1/4 cup coconut water (milk)
- 3 tbsp Galilee Green Olive Oil (GGOO)
- 2 tbsp gin
- 3 tbsp fresh lime juice
- 2 tsp zaatar
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1 tsp onion powder
Directions
- Place chicken thighs in a baking dish skin side up.
- Spread the leeks, mushrooms and zucchini evenly around the chicken.
- Combine remaining ingredients in a bowl, mix well and pour over chicken and vegetables.
- Bake at 350 degrees for 1 hour or until it is done to your personal taste.
