Here is an amazing salad that is always a hit.
Ingredients:
- 1 pound washed mushrooms
- ¼ cup Galilee Green olive oil
- ¼ cup freshly squeezed lemon juice
- ¼ cup diced purple onion
- 2 minced cloves garlic
- ½ teaspoon dried oregano
- ½ teaspoon whole black peppercorns
- ½ teaspoon dried mustard powder
- ¼ teaspoon crushed red pepper flakes for heat
- Sea salt and ground black pepper to taste
- 2 tablespoons chopped fresh dill
Directions:
- In a large pot of boiling salted water, cook mushrooms for about 3-4 minutes, just until tender
- In a large bowl, combine mushrooms, olive oil, lemon juice, purple onion, garlic, oregano, peppercorns, red pepper flakes and mustard powder and season with salt and pepper, to taste
- Transfer to a glass jar or an airtight container and place in the refrigerator for 6-8 hours and up to 5 days
- Serve at room temperature, garnished with chopped dill

You can easily substitute other vegetables such as zucchini, red peppers, cauliflower or with whatever vegetable you like with this marinade.
