When Michelle Smith and her husband decided to begin 2016 by eating a healthier diet, they started with some of our recipes and our pure Galilee Green extra virgin olive oil. In addition to feeling healthier, they quickly lost weight without feeling hungry!

And it didn’t take long for Michelle to come up with some recipes of her own! Here’s a delicious recipe of sauteed vegetables which makes a terrific side dish for your main course.

INGREDIENTS:

  • sauteed vegetables1/2 cup chopped green pepper
  • 1 potato chopped
  • 5 garlic cloves chopped finely
  • 1/2 cup chopped onion
  • 1 cup broccoli, cut into med sized pieces
  • 1/3 cup Galilee Green olive oil

DIRECTIONS:

  1. In a large frying pan, pour in oil and add potatoes, carrots and onions, stirring while cooking
  2. Saute over medium heat until onions are transparent.
  3. Add the other vegetables and continue to stir as needed for about ten minutes.
  4. Turn heat to low and cover with a lid for 5 more minutes.

Delicious and low calorie too!

I wanted to try this as I eat a lot of vegetables. But although the directions mention carrots they are not in the list of ingredients. How much carrot should be used?
