What I call a “Mount Tabor Bowl” (otherwise known as the Buddha Bowl or Hippie Bowl) is a creative way of eating a full meal in one personal sized serving dish.
The idea is to pack a whole bunch of great food stuff on top of more great food stuff in a bowl. The magic formula combines whole grains or beans, lean proteins, green leafy and other vegetables with a nut or seed based dressing.
The resulting meal bulges up out of the bowl in the shape of a rounded tummy, which is exactly what Mount Tabor, just 15 minutes down the road from us, looks like!
The number of combinations and permutations are infinite. The goal is to make your bowl colorful, tasty, and packed with nutrients. It is also a great way to manage your portion size.
(Quick Techina (Tahini) Sauce – 2 tablespoons techina paste, generous squirt of lemon juice, 2 tablespoons of water, salt, garlic powder and cumin. Mix quickly to make a yummy and healthy dressing.)
Here is one version that I hope you enjoy:
Ingredients:
- 1 medium sized sweet potato
- ½ purple onion
- 6 mushrooms sliced in half
- ⅓ cup pre-cooked black beans
- ¼ cup cooked chicken
- 1 cup of baby spinach
- 2 tablespoons of Galilee Green Olive Oil
- Salt, black pepper, garlic powder to taste
- 1 tablespoon Quick Techina Sauce
Directions:
- Pre-heat the oven to 400F/200C
- Cut sweet potato in quarters and purple onion into 2 chunks and drizzle about 1.5 tablespoons of olive oil and place on a baking dish skin side down
- Bake for 20 minutes and turn the sweet potatoes and onion, add the mushrooms and bake for another 20 minutes
- While vegetables are roasting in the oven, heat up the beans in a small skillet with the remaining olive oil and add salt and spices to taste
- Remove from flame once the beans are warm and slightly crunchy
- Add washed baby spinach to the vegetables in the oven 5 minutes before they are meant to be done
- Plate you your bowl starting with the sweet potatoes and add the remaining ingredients around the bowl leaving the sliced chicken for the top
- Drizzle the Quick techina dressing and ENJOY!
You’ll be amazed at how satisfying this dish is and how long you will be feeling full. What a great way to get in all those healthy and whole ingredients in one beautiful bowl.
