Joyce Hill Owens

This recipe is from Joyce Hill Owens of Decatur Alabama. We noticed this wonderful pic on her Facebook page and reached out to her.

Joyce found a great recipe for Mujaderra (lentil and rice pilaf with onions),  a favorite comfort food of middle eastern Jews on the Nosher.

Then she decided to “fuse” it with our Galilee Green recipe for Tsimmis (sweet cooked carrots), a favorie comfort food of Ashkenazi Jews from Europe!

Here’s how Joyce described the result of this Sephardic/Ashkenazi union  ..

Dinner tonight was simple but one of our favorites! Israeli recipes, Mujaderra from the Nosher and Tsimmis from a recipe at Galilee Green!

We love the simplicity of the mujaderra, but the Galilee Green Tsimmis are the best part of that meal… 😃

Both made with Galilee Green cold pressed olive oil…some of the best olive oil on the planet! And we are supporting our Israeli friends, as well.

Basic Mujaderra Recipe (from the Nosher)

Ingredients

  • 1/4 cup plus 2 tbsp Galilee Green olive oil
  • 3/4 teaspoon salt
  • 1/2 cup brown lentils, sorted and rinsed
  • 1 cup whole grain brown rice
  • 2 1/2 cups water
  • 2 large white onions, sliced in thin rings
  • Paprika to taste

Directions:

  1. Combine water, salt, and 2 tablespoons oil in a saucepan and bring to a boil over medium heat.
  2. Add the brown rice and lentils to the saucepan. Once the mixture has reached a boil, cover and reduce heat to low.
  3. Let simmer for about 45 minutes, until the brown rice and lentils have cooked through.
  4. While the rice and lentils are simmering, prepare the onions.
  5. Heat 1/4 cup oil in a skillet over medium high heat until oil glistens and coats the bottom of the skillet.
  6. Add the thinly sliced onions, and cook for about 20 minutes, or until desired color is achieved, stirring as needed.
  7. When cooked, sprinkle the onions with paprika to taste.
  8. Serve Mujaderra topped with browned onions.

Thank you so much for sharing your great idea Joyce!
