It’s wonderful getting together with extended family for a summer afternoon or evening. And of course food plays a big part in these gatherings.
Each family brings something to the table when our crew meets and one of the dishes that pleases just about everyone is this delicious aromatic, full of flavor, Olive Oil and Garlic Zucchini ‘Pasta.’
I like to make double the amount of sauce so those who eat regular wheat pasta can pour it over their dish. It’s great for grilled vegetables, even meat and fish.
Fresh garlic, fresh pepper and of course the wonderfully rich flavor of Galilee Green Extra Virgin Olive Oil makes this a mouthwatering dish that your family will ask for again and again.
People Pleasing Olive Oil and Garlic Pasta
(makes 6 full servings or 12 side dish servings)
Ingredients
- 4 large zucchinis spiralized
- 1/3 cup Galilee Green Extra Virgin Olive Oil
- 1 tbsp minced garlic
- 1 tsp salt
- 1/2 tsp fresh ground black pepper
optional
- 1/4 cup chopped fresh parsley
- 1/4 cup grated parmesan cheese
Instructions
- Place spiralized zucchini in a large metal or glass bowl.
- Heat the GGOO and minced garlic in a saucepan over medium heat. Cook just until the garlic is golden and remove from heat.
- Pour boiling water (enough to half cover) over the spiralized zucchini to heat it up, then drain well. Dry the bowl and return the heated zucchini to the bowl.
- Pour the garlic and olive oil over the spiralized zucchini making sure to scrape the sides to get it all. Add salt and pepper and mix well. (Toss in the chopped parsley and parmesan cheese if using)
