One of the ways we make our Shabbat meals special is by adding a delicious treat for dessert.
This past Shabbat I took out an oldie, but goodie recipe from almost four decades ago. I am sure many of us have similar recipes from the friends who cooked with us and shared special life moments with us.
By the way, it tastes even better with Galilee Green Olive Oil!!
Ingredients:
Cake
- 3 eggs
- 1 ½ cups sugar
- ⅔ cup Galilee Green Olive Oil
- 2 ¼ cups flour
- 3 teaspoons baking powder
- ¾ cup orange juice
- 1 teaspoon vanilla extract
Streusel
- ½ cup brown sugar
- 2 teaspoon cinnamon
- 1 teaspoon Galilee Green Olive Oil
- 1 tablespoon flour
Directions:
- Beat eggs, sugar, olive oil and vanilla
- Mix dry ingredients
- Prepare orange juice
- Alternately mix in the flour and orange juice to the egg mixture
- Pour ½ the cake mixture into a greased Angel Food Cake Pan
- Sprinkle ½ the streusel around the cake mixture
- Add the remaining mixture and sprinkle the remaining streusel topping
- Bake at 325F/170C for 45 minutes
- Test with a fork or toothpick
- Cool completely and remove from pan
This cake freezes very well and is the perfect light cake to share with good friends and a cup of coffee. Enjoy!
